Ever heard of BMO? Bolle med ost, aka bread with cheese is a Danish staple. Almost every bakery or cafe you go to, you can order a BMO. Essentially it is bread-- usually sourdough bread-- with butter and cheese. It is so simple and yummy but also very filing.
Sustainable food production plays a crucial role in Denmark, where many cafes and restaurants prioritize using fresh, locally sourced produce. Menus are often curated based on seasonal availability of ingredients. For example, Noma, a three-Michelin-star restaurant updates the menu three times every year following the different seasons. As of right now, Noma is in their spring menu which highlights seafood dishes. There are so many places cafes/restaurants similar to Noma that curate menus based on seasonal availability.
Personally, I usually go to cafes that have Matcha. This way I hit two birds with one stone, I am able to try new cafes while also finding the best matcha spots in Copenhagen.
